Baked chicken with Dates

Ingredients
  

  • 1 kg Chicken
  • ¾ cup Onion sliced
  • 1 tbsp Garlic minced
  • 10 nos Dates divided
  • 2 nos Bay Leaves
  • 2 tbsp Lemon juice
  • 4 tbsp Olive Oil estra virgin
  • 2 tbsp Honey
  • 1 tsp Oregano
  • 1 tsp Black Pepper
  • Salt to taste

Instructions
 

  • Wash and pat dry the chicken. Make a few cuts on the chicken pieces so that the marinade can be absorbed easily into the chicken.
  • Deseed and divide the dates into 4 and 6. Chop up 4 of the dates into small pieces and halve the other 6. Keep the halved dates aside.
  • In an ovenproof dish, add the chicken, sliced onions, garlic, chopped dates, bay leaves, lemon juice, olive oil, coriander powder, oregano, black pepper, and salt. Use your hands to rub the marinade into the chicken well. Cover with cling film and set aside for at least an hour. Or even overnight (like me!)
  • Sprinkle the set aside halved dates on the chicken and bake in a pre-heated oven at 180 degrees for about 40 minutes.
  • Garnish with fresh coriander and enjoy with dinner rolls or mashed potatoes and veggies!
