Method
- Heat oil in a pan, add onions and cook for 2 minutes until they start to become soft. Add sliced ginger, garlic and chillies and mix. Cook for another minute.
- Add the chicken mince and cook for 3-4 minutes on high heat. Season with salt, soy sauce, fish sauce and honey (you can also use brown sugar), mix well and cook for 5-6 minutes.
- Add roughly torn basil leaves, mix and cook 3-4 minutes.
- Serve over steaming hot rice, with some more holy basil leaves and a sunny side up.
