Viral French onion pasta – one pot recipe

French onion pasta – this viral tik tok recipe is packed with so much flavour that it was difficult to ignore. And there is very little not to love. Caramelized, sweet onions, dry wine, cream, parmesan and to top it all, a one-pot recipe!

Inspired by the classic French onion soup, this recipe doesn’t need much. And this is just multi folds better than the Viral baked Feta recipe. While the purists looked down upon the baked feta pasta, this French onion one-pot is just impossible to ignore. Slightly creamy, umami, cheesy, and no-clean up! This is a vegetarian recipe since I used veg stock.

What do you need for French onion pasta?

  • Onions: obviously! Preferably white or yellow onions, but red onions work just as fine as they are more readily available in Delhi.
  • White wine: Choose a dry wine to deglaze the pan. Adds acidity and slight sweetness.
  • Stock: You can choose veg stock or chicken stock. I use these stock cubes.
  • Worcestershire sauce: It is easier to buy this than pronounce it. The depth of flavour added by this sauce is unparalleled. Malt vinegar spirit vinegar anchovies tamarind garlic onions molasses sugar salt spices flavorings.
  • Rigatoni: Rigatoni is perfect for this recipe, takes slightly longer to cook, but you can also use any other short pasta like Orecchiette or Casarecce.
  • Heavy cream: Will add creaminess, but you can switch it for milk to cut down the calories.
  • Parmesan cheese: A generous shred of parmesan on pasta is always essential.

Ingredients – serves 2

  • Butter – 4 tbsp
  • Onions – 2, large
  • Salt and pepper – to taste
  • White wine – 1/2 glass
  • Rigatoni pasta – 4 ounces
  • Vegetable stock – 500ml
  • Worcestershire sauce – 1/2 tsp
  • Dried oregano – 1tsp
  • Half and half – 1/2 cup
  • Parmesan cheese – 1/4 cup + 1/4 cup

Method

  • Start by thinly slicing the onions.
  • Melt the butter in a heavy bottom pot. Add the onions and cook on medium heat.
  • Season with salt and pepper to taste and continue to cook on medium heat to caramelize the onions.
  • Deglaze the pan using white wine and continue to mix.
  • Add the rigatoni pasta to the caramelized onions. Pour in the stock, Worcestershire sauce, and oregano. Cover a let the pasta cook for 7-8 minutes, until the pasta is almost half done.
  • Add the half and half and mix well, let the pasta cook till al dente, for another 5-6 minutes. Rigatoni usually takes about 15 minutes to cook.
  • Sprinkle 1/4 cup parmesan and mix well.
  • Dish it out to a serving dish and sprinkle the leftover parmesan just before serving.
