Baked Feta and tomato pasta – trending recipe

Baked feta and tomato pasta with olive oil, garlic, oregano, and fresh basil leaves. This trending pasta is one of the most amazing trends of 2021! The wrap trend was a pretty good hack too, but this is another level. (Check out the wrap trend here) The creaminess of feta, the punch of the tomatoes, and freshness from basil leaves, all tied together with olive oil. What a winner.

The best part of the baked feta and tomato pasta is that it comes together effortlessly and absolutely in no time. But also celebrates the simplicity of the ingredients beautifully. The combination of EVOO, tomatoes, garlic, and oregano is as classic as it gets.

It’s is legit a one-pot dish, you just have to bake all the ingredients and add cooked pasta to it. And the freshness will take care of the rest. Fresh basil leaves really balance the dish beautifully. Cutting through the salt feta and the baked tomatoes!

Ingredients for baked feta and tomato pasta

  • Cherry tomatoes – 200g
  • Feta Cheese – 200g
  • Garlic cloves, chopped – 2 tbsp
  • Extra Virgin Olive oil – 1/3 cup
  • Oregano – 3 tbsp
  • Pepper – 1/2 tsp
  • Salt – to taste
  • Basil leaves, roughly chopped – 1/4 cup
  • Pasta of choice – 4 oz (I used capellini)

Method

  • In an oven-proof dish, add the tomatoes, chopped garlic, and half the olive oil. Mix well.
  • Add a pinch of salt, pepper, and 2 tbsp oregano and mix.
  • Place the whole block of feta cheese in the center, surrounded by the tomatoes.
  • Pour the remaining olive oil and oregano on the feta cheese. Since feta is inherently salty, don’t add a lot of salt at this point. You can check and adjust salt and pepper after you have added the pasta.
  • Bake the tomatoes and feta in a pre-heated oven at 200 degrees Celcius for 30 minutes.
  • Meanwhile, cook the pasta according to the instructions on the packet.
  • Remove the dish from the oven and rest for 5 minutes.
  • Using a spoon to mix the cheese and tomatoes well. Add the fresh basil leaves and mix again.
  • Add the cooked pasta and toss well.
  • Taste and adjust the seasoning, I personally didn’t need to add anything.
