Bread quiche – rolled up slices of bread, bacon, sausages, lots of cheese, and eggs.

Breakfast experiments have been my favorite for a long time. From egg and cheese bake to sweet omelet – my latest experiment has been with many, many, many kinds of sandwiches. So, I thought it was a good idea to just go back to the classics.

Unlike a traditional quiche made with shortcrust, this one is made with a bread crust – hence is a much quicker cook. But that’s not even the best part – they can easily be stored, frozen, and used as a make-ahead brekky!

Bread Quiche – all you need to know!

Quiche is a French pastry with a buttery, flaky tart shell and a savoury custard filling with meat or veggies and lots of cheese. The bread quiche is much easier to prepare as you roll out regular slices of milk bread to form the crust.
Add on your favourite toppings – cold cuts, veggies and cheese and you are good for this make ahead breakfast! Check out the video here.

Ingredients for 6 bread quiche

  • Bread slices – 6
  • Eggs – 2
  • Milk – 1/2 cup
  • Shredded cheese – 1/3 cup
  • Dried herbs – 1 tsp
  • Bacon – 3 links, cooked and chopped
  • Sausages – 2 links, cooked and chopped
  • Olives – 1 tbsp
  • Chilli flakes – 1 tsp
  • Salt – to taste
  • Cheese cube – 1

Method

  • Crack 2 eggs in a bowl. Add the milk and whisk well.
  • Add shredded cheese, dried herbs, cooked bacon, sausages, olives, chili flakes, and salt to the bowl and mix well. Set aside.
  • Take a slice of bread and flatten it using a rolling pin. Repeat with all 5 slices.
  • In a greased muffin tin, place the bread slice and crimp it to resemble a quiche base. Pour approximately 1-1/2 tbsp of the egg mixture. Repeat for the rest.
  • Cut a cube of cheese into 6 equal parts and press it down in each quiche for some extra cheesy gooeyness.
  • Bake in a preheated oven at 180 degrees Celsius for 25-30 minutes. Cool it down for 5 minutes before digging in!
