Sausage stuffed pancake cereal – top it with goat cheese dressing or drizzle some maple syrup if you like a sweet and savory combo! Pancake cereal boomed up in the pandemic. And to be honest, I didn’t get the craze until I came up with this! Very much liked stuffed pancake bombs, but turns out these bite-sized goodies are not just great for breakfast; but also anytime munching!

Making a classic pancake batter, I actually switched from all-purpose flour to rice flour by mistake. And most geniuses happen by accident. It was one of the best pancake batters that I managed to whip up. The best bit – made it gluten-free – YAY!

What you need?

  • Sausages : Choose fully cooked ones, preferably with some herbs to add onto the flavours. I chose chicken, onion and cheese sausages from Meatzza.
  • Rice Flour – It started off as a goof-up, but turns out rice flour pancakes turn out better than all-purpose flour ones! And of course, gluten free, is a given plus!
  • Toppings – You can water down some goat’s cheese of your choice with milk to top these cereal pancakes with. Or you can also use the good old maple syrup or honey for a sticky, sweet, savory delight!

Ingredients for sausage stuffed pancake cereal

  • Sausage links – 4
  • Rice flour – 1 cup
  • Oil – 2 tbsp
  • Baking powder – 1-1/2 tsp
  • Sugar – 1-1/2 tsp
  • Vanilla essence – 1 tsp
  • Egg – 1
  • Milk – 2/3 cup
  • Butter – to cook

Method

  • Sieve rice flour, baking powder and sugar into a bowl.
  • Whisk the egg and add milk, oil and vanilla essence and whisk well until combined.
  • Slowly add the wet ingredients into the dry ones, mixing continuously. Whisk until completely combined into a thick, smooth batter. Make sure there are no lumps. Set aside for atleast 15 minutes.
  • Meanwhile chop up your breakfast sausages into equal discs – about 1 cm.
  • Heat butter in a pan.
  • Take one sausage disc and coat it with the thick batter and cook it on medium-low heat for 2-3 minutes on each side.
  • Top your sausage stuffed pancake cereal with honey, maple syrup or cream cheese!
