Chickpea patty burger

No, this is not a drift in my eating habits, I still LOVE my meats. (barring the occasional outpour of love for mushrooms) This was an outtake from taking forward my falafel recipe, and many, many Pinterest inspirations. It is simple to make, toasted not fried, so healthy much and put together in a burger, tastes insane. Here is a 5 ingredient recipe for a chickpea patty.

The recipe is for two 4-inch patties, so you can increase the proportions if you are making more.

Ingredients for chickpea patty

  • Chickpea/ choley – 1 cup
  • Cornflour – 2 tbsp
  • Salt and pepper – to taste
  • Onion – 1, medium
  • Oil – 1 tsp

Ingredients for burger dressing

  • Burger bun, sesame or wheat bran topped – 1
  • Mozzarella cheese – to dress
  • Cheddar cheese – to dress
  • Mayonaisse or butter – 1/2 tsp
  • Mint leaf – to garnish
  • Mango and jalapeno relish – 1 tbsp

Method

  • Soak chickpeas for about two hours.
  • Put the soaked chickpeas in a pressure cooker and 2 cups of water and cook for 20 minutes. Release the pressure and drain excess water, if any.
  • Add salt, pepper and cornflour to the cooked chickpeas. Mash lightly till they come together. Add more cornflour if required.
  • Make 2 patties out of the mash and refrigerate for 15 minutes.
  • Heat oil in a non-stick pan, add the patties, cook on medium heat for 5 to 7 minutes. Flip and cook on the other side till crispy.

To assemble the burger

  • Spread mayonnaise or butter on the bun, place one patty, cheese and relish. Place the other patty, more cheese, relish and top with a mint leaf.

You can make these as burger sliders, make do with one patty, or even make small cutlets or even a meal bowl. I paired it up with mango and jalapeno relish from The Gourmet Jar.
